Chef Thomas Riding received his formal culinary training in Greenock, Scotland and worked for the Hilton group and at a Scottish Highlands hunting lodge where he honed his skills and gained recognition in Michelin, Taste of Scotland and Good Hotel Guide publications. 

Lisa Clarke, a third generation Innkeeper, is a graduate of the Culinary Institute of P.E.I., a pastry chef, sommelier, a great passionate grower of heritage tomatoes.  Lisa and Thomas collaborate effectively to create the “local flavours regional cuisine” for which Sam Jakes Inn has become renowned.

Sam Jakes Inn in Merrickville is a four-star country inn offering accommodation, fine dining, and conference and spa facilities; housed in an 1860's stone building that has been meticulously restored.  Throughout its existence, the Inn has been in the vanguard of 'buying local'.  Serving only Ontario VQA wines, fruit wines and micro brewery beers, and featuring a wide array of local products, the Inn promotes consumer recognition and appreciation of local products by listing its suppliers on the its menus and website.
